Sausage and Kale Soup
This creamy concoction of late winter vegetables soaks in the rich flavors and energy punch of homemade sausage, delivering a soothing and nourishing mid-winter meal.

Ingredients
- 3 Tbsps. Coconut Oil
- 1 Yellow Onion Diced
- 5-7 Cloves of garlic Minced
- 2 Bay leaves
- 1 Lb. Sausage
- 2 Stalks of Celery Chopped
- 2 Large Carrots Chopped
- 2 Potatoes Chopped
- 6 Cups Bone Broth
- 2 Cups. Kale Diced
- 1 Cup Corn (optional)
- 1 1/2 Cups Milk of choice
- Sea Salt and Fresh Pepper
Instructions
- On medium heat saute the onion, garlic and bay leaves in the oil until the onion has started to simmer.
- Add in the sausage and celery and cook until it can be tasted safely.
- Add in the broth and carrots. Cook for several minutes.
- Add in the diced kale and let simmer until the kale is tender and easy to chew, about 15 minutes. .
- Add the milk at the end when you are ready to serve and stir gently to combine. The milk you choose will add subtle changes to your soup. Coconut milk is a good choice here if you like that. Or if you have a lot of cows milk on hand use that. If you want the soup creamier use half milk and half cream. This is a good way to tailor this soup to match the needs of your day and those you are nourishing.
