
Carrot Ginger Sesame Dressing
This thick, orange dressing is filled with tang, with healthy oils and vegetables. I'm a firm believer that a good dressing should be the healthiest part of your salad.
Ingredients
- 4 oz. organic carrot peeled, roughly chopped
- 1 oz. organic onion
- 1 1/2 Tbsps. organic sesame oil
- 1/2 cup rice vinegar
- 1/2 cup high quality vegetable oil MCT, olive or avocado are good choices
- 1/4 cup organic sucanat
- 1 garlic clove (1/8 oz)
- 3/4 oz ginger root
- 3 Tbsps. lactofermented lemon (a quarter of one lemon) or lemon juice if you do not have the lactofermented lemon
- 1 Tbsp organic miso or tahini (optional)
- 1 1/2 tsps. sea salt
Instructions
- Put everything into the blender and blend until it is very smooth.
- Refrigerate. It should last about a week in the refrigerator. Shake it up before using.
- You can make a slightly different dressing by using miso or tahini, they each have a different character and it can be fun to change it up from time to time. This can also be left out.
