Maple Cardamom Breakfast Sausage
This breakfast sausage packs energy, flavor and mouth-tingling joy into many an Epicurean Homestead farmhouse breakfast.

Ingredients
- 2 cups ground pork
- 1/2 onion chopped small
- 5-6 cloves garlic minced
- 1 Tbsp cardamom
- 1.2 tspn anise seed crushed if full size
- 1 Tbsp sea salt
- 1/2 tspn dried thyme
- 1/3 cup natural sugar
- 1/2 cup maple syrup
- 1/2 tspn red pepper flakes (optional)
Instructions
- Cook onion till soft but not browned. Add garlic to release flavors.
- Combine onion and garlic with the sausage in a bowl and mix in other ingredients.
- The flavor is fullest if it sits for some time before cooking. I usually try to put it together the night before if I'm making it fresh.
- Shape into patties and fry until cooked through. The sugar causes a nice browning, so make the patties thin and cook over medium-low heat to prevent scorching.
