Maple Cardamom Breakfast Sausage

Ingredients

  • 2 cups ground pork
  • 1/2 onion chopped small
  • 5-6 cloves garlic minced
  • 1 Tbsp cardamom
  • 1.2 tspn anise seed crushed if full size
  • 1 Tbsp sea salt
  • 1/2 tspn dried thyme
  • 1/3 cup natural sugar
  • 1/2 cup maple syrup
  • 1/2 tspn red pepper flakes (optional)

Instructions

  • Cook onion till soft but not browned. Add garlic to release flavors.

  • Combine onion and garlic with the sausage in a bowl and mix in other ingredients.

  • The flavor is fullest if it sits for some time before cooking. I usually try to put it together the night before if I'm making it fresh.
  • Shape into patties and fry until cooked through. The sugar causes a nice browning, so make the patties thin and cook over medium-low heat to prevent scorching.
